What you need for this vegan recipe for kids
4 cups Italian bread, cut into 1-inch cubes
2 pounds flavorful diced ripe tomatoes
1/4 cup chopped fresh basil, or more if you want
1/3 cup chopped green olives or black
2 tablespoons extra virgin olive oil
2 tablespoons white balsamic or white wine vinegar
salt and freshly ground pepper to taste

Preparation:
Preheat the oven or toaster oven to 300 degrees.
Arrange the bread cubes on a baking sheet and bake until dry and lightly golden, it should take about 15 minutes. Remove from the oven and let them cool.
Just before serving, combine in a large bowl with the remaining ingredients and toss together.
