"Cream" of Broccoli Soup - kid friendly vegan recipe

great vegan recipe for "Cream" of Broccoli Soup
After a long vacation i'm back with a kid friendly recipe that could make your kid fall in love with broccoli.

What do you need for this vegan recipe:

2 cups broccoli florets
1/2 cup (1 stick) margarine
1/4 cup celery, diced
1/4 cup onion, diced
1 bay leaf
1/2 cup all-purpose flour
1 to 2 tsp. instant faux-chicken broth powder (try Osem or Telma brands, available in the Kosher section of your supermarket)
Freshly ground black pepper, to taste
4 cups liquid nondairy creamer or soy milk

Vegan Butternut Squash Soup

My first vegan soup. Dairy free, easy, vegetarian butternut squash cream soup recipe, with light curry spices and coconut milk, lovely as a light supper with bread, or as the first course of a company dinner.

What do you need for this vegan recipe:

1 lg butternut squash
4 cups soup stock or 4 cups of water + 2 vegan bouillon cubes
1/2 tsp cumin powder
1 Tbsp olive oil
1/4 tsp cinnamon
1 tsp coriander powder
1/2 tsp dried ginger powder
1/4 tsp gr nutmeg
1/2 cup regular or light coconut milk
1/2 tsp fennel seed powder
1/2 tsp salt
fresh ground pepper to taste

You can also add 1/2 tsp green curry paste or a pinch of cayenne and also optional 1/4 cup minced fresh cilantro or croutons as garnish.

Asian Noodle Salad

Ingredients for this vegan recipe for your kid:

8 oz dried spaghetti, or soba noodles
2 cups of small cut broccoli florets
1 lg peeled and thinly sliced carrot
3 Tbsp dark sesame oil
2 cloves garlic, peeled, stemmed & minced
1 Tbsp fresh minced ginger
2 Tbsp soy sauce
3 Tbsp lime juice
1/8 tsp cayenne
1/2 tsp paprika
1/2 tsp fresh ground black pepper
2 Tbsp. chopped fresh basil or parsley
3 sliced green scallion
12 cherry tomatoes, halved OR 1/2 sweet red pepper, seeded and sliced thin
1/2 cup toasted pine nuts or peanuts

4 cups Italian bread, cut into 1-inch cubes
2 pounds flavorful diced ripe tomatoes
1/4 cup chopped fresh basil, or more if you want
1/3 cup chopped green olives or black
2 tablespoons extra virgin olive oil
2 tablespoons white balsamic or white wine vinegar

approximately 12 artichokes, quartered
2 cups garbanzo beans (chickpeas), cooked
1/2 cup onion, minced
1 clove garlic clove, minced
1 1/2 tablespoons fresh lemon juice
1/8 cup extra-virgin olive oil
3-4 sun-dried tomatoes, sliced thinly (optional, and to taste)
1/2 teaspoon rosemary or more if you desire
sea salt and freshly ground black pepper, to taste

Another vegan moist and soft cookie recipe. If you don't like pumpkin u could try them also, because i'm not a fan but i  like these. You can use the raisins and walnuts whole or you could grind them.

Vegan mint chocolate chips cookies

This recipe is great your kids will love it and so will you. The dough comes out delicious and has a great brown tone. They will not be crunchy, the cookies will be moist and soft. With these ingredients you will get about 20 cookies. If u can't find vegan mint chocolate chips, you can use simple vegan chocolate chips and add some peppermint, about one quarter of a teaspoon in the dough.

What will you need for this vegan recipe for kids:

3/4 cup flour
3/4 cup sugar
1/2 cup unsweetened cocoa powder
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup vegan mint chocolate chips, or simple
1 Tbsp. cornstarch + 2 Tbsp. water
1/2 cup margarine
1 tsp. vanilla
