Fennel with Mint Salad

You want a fast, fresh and easy recipe? Then this is for you! Mint and fennel go very well together, they create a great salad with a healthy and light taste. You and your children will love it.

What do you need for this vegan recipe:

2 bulbs fennel (anise), slivered
1/4 cup chopped fresh mint leaves
1/2 head lettuce, or approx 2 cups
1/2 tsp salt
1/2 tsp pepper
2 tbsp olive oil 

Preparation:

So easy. :) Mix fennel with oil, salt and pepper in an roasting pan and bake in the oven at 350 degrees for about 10 minutes, until the fennel is slightly soft. Allow to cool slightly, and toss in the lettuce and mint leaves.
