Cauliflower salad

This salad is not really for kids it's for you the parents, so enjoy. You sometimes overlook cauliflower but you should not. :) Try this recipe and tell me what you think.

The prep time for this vegan recipe is about 15 mins. and you need to cook it for about 35 minutes.

What you should do:

Heat oven to 200C/180C. Put the cauliflower with the oil, season and roast for about 15 minutes. Add the red onion and roast for 15-20 minutes more.

While the cauliflower is roasting, mix the vinegar, honey and raisins with some seasoning.

When the cauliflower is done, stir in the dressing, almonds and spinach, and serve.

Lemon and Garlic Dressing:


4 cloves of garlic
1 tablespoon dry mustard
2 lemons, juiced and zested
½ cup raw pistachios
1/3 cup + 1 tablespoon olive oil
1 teaspoon coarse sea salt
Pinch of fresh cracked pepper
Parmesano reggiano (optional)

  2. You can just add those by taste but i have added a lemon and garlic dressing that is very good.
