Asian Noodle Salad

Great recipe and if your kids likes paste he will love this recipe. It's served cold.

Ingredients for this vegan recipe for your kid:

8 oz dried spaghetti, or soba noodles
2 cups of small cut broccoli florets
1 lg peeled and thinly sliced carrot
3 Tbsp dark sesame oil
2 cloves garlic, peeled, stemmed & minced
1 Tbsp fresh minced ginger
2 Tbsp soy sauce
3 Tbsp lime juice
1/8 tsp cayenne
1/2 tsp paprika
1/2 tsp fresh ground black pepper
2 Tbsp. chopped fresh basil or parsley
3 sliced green scallion
12 cherry tomatoes, halved OR 1/2 sweet red pepper, seeded and sliced thin
1/2 cup toasted pine nuts or peanuts

Italian bread and tomato salad

This is a great recipe easy to make and your kids will enjoy it too. This recipe is after a Mediterranean salad.

What you need for this vegan recipe for kids


4 cups Italian bread, cut into 1-inch cubes
2 pounds flavorful diced ripe tomatoes
1/4 cup chopped fresh basil, or more if you want
1/3 cup chopped green olives or black
2 tablespoons extra virgin olive oil
2 tablespoons white balsamic or white wine vinegar
salt and freshly ground pepper to taste

Artichoke Chickpea Salad

Ingredients for this vegan recipe:

approximately 12 artichokes, quartered
2 cups garbanzo beans (chickpeas), cooked
1/2 cup onion, minced
1 clove garlic clove, minced
1 1/2 tablespoons fresh lemon juice
1/8 cup extra-virgin olive oil
3-4 sun-dried tomatoes, sliced thinly (optional, and to taste)
1/2 teaspoon rosemary or more if you desire
sea salt and freshly ground black pepper, to taste
